In 2012, Kenyon student Anna Peery conducted an independent field project with Paul about local food and aging. "The Pheasant Under Glass: What's wrong with the senior dining facilities and how it can be changed" illustrates the struggles and joys Paul comes across on his quest for the embracement of local, fresh foods in the senior dining community. The paper includes interviews and field observations from the Station Break, Centerburg Senior Services, Fredericktown Senior Center, Jennifer Bishop at AAA, Scott Komitau at the Laurels, Danville Area Senior Citizen lunch, and Autumn Health Care in Knox County, Ohio.
